It’s soup season, ya’ll! Fall is my absolute favorite time of year and soup is one of the reasons why. I make one big pot about once a week and eat on it for days. This vegetable soup is both comforting and crazy healthy. It’s chock full of vegetables and, let’s have an honest moment, we all need more of those in our lives.
My southern-ness is showing here. Cornbread is one of my love languages. And when you add fresh corn, sharp cheese, spicy jalapenos and bacon grease then we just need to hold on a minutes and collect our thoughts. This may be too much. It may be pushing the limits a bit on acceptable food + human relationships.
But it’s absolutely worth it. I know this isn’t anything ground-breaking, but maybe it’s close enough to feed my tendencies for exaggeration. They really are so damn good, loves.
Everything I have been posting lately has been so vibrantly colorful – I think I’m trying to hold on to summer for dear life. Maybe it is because our little beach town refuses to get below 80 degrees so we are all up in some late October denial up in here. I’m ok with it.
You guys… isn’t it gorgeous? All the colors. All the ridiculous over the top flavors in one bowl. A perfectly marinated and grilled flank steak, some grilled peppers, lightly dressed greens, tomato confit {fancy pants way of saying tomatoes cooked in an embarrassing amount of olive oil}, marinated shallots, and golden beat hummus combine to create a bowl that will undoubtedly cause you to embarrass yourself with too much enjoyment. {I’m hoping I’m not the only one that reacts with too much enthusiasm over my food}
