BUTTERMILK BLUEBERRY GRANOLA MUFFINS

Hi, loves! How is everyone doing? Are we all staying sane during quarantine and not killing each other + drinking too much + eating all the wrong things + giving ourselves bangs? If you are… then WELCOME TO THE FREAKING CLUB. We are all hanging around here with poorly snipped hair and an extra few pounds. It’s ok. Let’s make muffins, shall we?

This is another recipe that is in regular rotation with a lot of my clients. They are packed with dried fruit and hearty granola so you can feel just a bit better about eating them, ok? We need to tell ourselves that in these trying times.

I use dried blueberries because sometimes life is hard and the blueberries are just too ripe and full of moisture and that makes for wet muffins. No thank you. This is a foolproof way around wetness.

You could definitely substitute a different dried fruit if you’d like! Dried cranberries + a little orange zest would be AMAZEBALLS. Dried cherries + chocolate chip granola may just be a little too over the top fantastic but you should go with it. Chopped dried apricots would be killer, too! So many options and you have so much time on your hands! What a wonderful serendipitous situation we find ourselves in!
