CORNMEAL LIME COOKIES

Listen. I am a diehard chocolate lover. Chocolate chip cookies are my thing and I rarely stray. Except for these beautiful little sweet/tart pillowy cookies that have my heart forever and always.

They are SO DANG GOOD. And you should go right ahead and make them right now. After all, we are – every last one of us – in the throws of our quarantine baking marathons and I’m here to help you out.

Let’s talk about mixing up cookies. Mix times are super critical to getting the texture that you want… too little mixing and things go south. Too much mixing and you end up with chewy bread instead of soft pillowy cookies. I’ve included mixing times for you so that you don’t have to guess… because I’m here to make sure you have cookie success!! (you’ve got this, loves… just set a dang timer)

Let’s also talk about ingredients. Can you make good cookies with cheap butter and flour and vanilla? Maybe. Can you make kick-ass cookies if you spend a few more quarters on the good stuff? YES YOU CAN. Use all-purpose unbleached flour. Use a really good quality unsalted butter. (I love Vital Farms or Kerrygold) And please for the love of all that is good and right, use REAL vanilla. These are the rules of winning the cookie game.
