GRILLED FLANK STEAK BOWLS

You guys… isn’t it gorgeous? All the colors. All the ridiculous over the top flavors in one bowl. A perfectly marinated and grilled flank steak, some grilled peppers, lightly dressed greens, tomato confit {fancy pants way of saying tomatoes cooked in an embarrassing amount of olive oil}, marinated shallots, and golden beat hummus combine to create a bowl that will undoubtedly cause you to embarrass yourself with too much enjoyment. {I’m hoping I’m not the only one that reacts with too much enthusiasm over my food}

Let’s discuss something incredibly important to your kitchen success. We need to talk about meal prep and food components. I have found that the most important thing you can do for your week is to take a few minutes at the beginning to prep a few things that will be a smashing success in whatever you throw them into.

I’m talking about things like the Roasted Golden Beet Hummus (click HERE for that recipe), Garlic + Thyme Marinated Shallots (HERE), and the Garlic Roasted Tomatoes. (HERE) These are all things that are super easy to throw together and then use to assemble some pretty kick-ass meals on the fly. This is genius level cooking here, loves! {and by genius I obviously mean crazy easy}

This bowl has all three of those recipes plus an amazing + simple grilled flank steak, some grilled red + yellow peppers and some arugula simply dressed with lemon juice + olive oil. But what I want you to do is use this as inspiration. It’s not necessary to make this exactly as you see here!

Not eating meat? Add grilled portabellas instead. No red meat? Throw some chicken in that bowl (even a store bought rotisserie chicken will work beautifully!) Use whatever greens you have or buy some really great pre-made hummus. Use whatever makes your skirts fly up and call it a success. I’m already proud of you.

Here are all the details on the flank steak! This marinade works great on any kind of steak or chicken. You can throw in some fresh herbs if that’s what you’re feeling. {While you’re at in, seed and quarter a few red or yellow peppers, brush with olive oil, S+P and then throw on the grill with the steak. They are so good in this dish but also with eggs or in a salad or whatever else you feel like throwing them in}

WHAT YOU NEED
1 flank steak (2-3 pounds depending on how many people you are feeding)
1 cup olive oil
1/2 cup balsamic vinegar (or red wine vin if you prefer)
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
 
WHAT YOU DO
1. Put all marinade ingredients in a large ziplock bag and shake shake shake to combine well.
2. Add the flank steak and store in the fridge for at least 3 hours or overnight.
3. Remove from the fridge about 30 minutes prior to grilling.
4. Heat your grill or grill pan to a medium high heat. Remove the steak from the marinade and allow the excess to drip off. Season the steak with kosher salt and pepper.
5. Sear the flank steak for about about 5 minutes each side for rare. If you prefer your steak well done, leave it on there a bit longer. {but seriously whyyyyyy}
5. Remove from the grill and let it rest for 5 minutes before you cut. Slice against the grain.
6. Add the steak slices to your bowl. {add your favorite combination of hummus, grilled peppers, dressed greens, tomatoes, roasted vegetables, potatoes or rice… you know, whatever floats your boat, loves.}
