PUMPKIN ROLL CAKE

Hi, all! Abbye here. I have to admit something. I am not the kind of basic white girl that loves everything pumpkin spice as soon as October 01 rolls around. That has never been my thing. I want pumpkin things one day a year and that’s IT. It just makes sense on Thanksgiving day to bring out all the deeply spiced drinks + apps + side dishes + desserts that your heart can dream up. But before and after that day? No thank you.

Now I’m not the type of woman to disparage anyone else for the PSLs and their pumpkin candles and their pumpkin scented underwear, so this is the height of ranting that will come from me. Thanksgiving day? Bring out ALL THE fall-ish flavored things and I will rejoice in its goodness to all mankind. Amen.

Emily and I both do a LOT of baking for friends and neighbors and co-workers and family around the holidays. We are both inundated with pie and cookie and cake requests and we try our best to oblige everyone. I get buried under pies and Emily gets buried under this cake. YOU GUYS, THIS PUMPKIN ROLL CAKE is everyyyyyything. She is famous for it around these parts and people go absolutely bonkers nuts if they miss her cutoff for holiday orders.

I’ve watched her make this a couple of times and I am here to bring you the good news of easy and show-stopping holiday desserts that will make your mother-in-law finally proud to call you a part of the family.

Line a 12×17 inch jelly roll pan with parchment paper, making sure to come up the sides of the pan. Sprinkle a kitchen towel with powdered sugar and set aside.

Once you have it all mixed up, here is the low down to get the cake into a gorgeous roll. You can do this, we have so much faith in you!

Spread the cake batter evenly into the prepared pan. {bonus points if you sprinkle some nuts over the batter!}

Bake it according to the printable recipe below and then proceed to the magical part that will make you look like a unicorn fairy holiday baking wizard!! Go you!

Straight from the oven and while the cake is still hot, remove the cake from the pan using the edge of the parchment.

Flip the cake over onto a kitchen towel that has been sprinkled with powdered sugar. Peel off the parchment.

Roll the cake and towel up together and then allow to sit + cool for 30 minutes – 1 hour.

Mix up your icing per the recipe instructions below and then carefully unroll the cake. Spread the icing evenly over the surface of the cake and then re-roll! Wrap in plastic wrap and chill for at least an hour.

When ready to serve, sprinkle to your little sugar-lovin’ hearts’ content with powdered sugar and then set back and watch your guests exclaim your genius level baking and their undying love for you AND the pumpkin spiced everything. It’s a win-win, loves. Trust us!
