A BACON ACCIDENT

One of my favorite things ever is cooking for the people I love. There was a season in my life where my door stayed unlocked and people came to my house to eat by the dozens on a weekly basis. My kitchen had an open door policy for a while and it was everything my heart needed.

One Sunday night I was hosting a large group of friends for Brinner. On the top of the list of MUST-HAVES was bacon, obviously. Right under bacon on the list of necessities was SPICY. I was trying a recipe for a sweet/spicy bacon from a cookbook that I absolutely trust but something went terribly wrong.

I am very good at following a recipe when necessary and I’m not sure what happened here but it was a complete FAIL.

FAILURE X 14298. So, I packed up the kids and ran to the market for emergency bacon an hour before my guests arrived. (remember that bacon was numero uno on the list of necessities)

I knew I wanted spicy bacon so I mixed up some Sriracha and some brown sugar and hoped for the best.

YOU GUYS I don’t even know what to say about this strange magic. But Sriracha Bacon has become a household staple that works on burgers, BLT’s, crumbled up into salads or omelettes or just eaten straight. Holy Mother Of All That Is Holy this stuff is ridiculous.

WHAT YOU NEED
1 pound of thick sliced, applewood smoked BACON (I went for the thick sliced market bacon sold in the butchers case – trust me… it’s WORTH IT)
2 tbsp BROWN SUGAR
3/4 cup SRIRACHA (hot chili sauce)

WHAT YOU DO

Active Time: 10 minutes
Cook Time: 12-15 minutes
1. Heat your oven to 425 degrees.
2. Line a baking pan with tin foil and put a metal rack inside. Lay out the BACON on the rack.
3. Cook for 12-15 minutes. Remove the pan from the oven and turn the bacon over using tongs.
4. Mix the brown sugar and sriracha together in a small bowl and then brush onto the bacon – GENEROUSLY.
5. Pop the pan back in the oven and cook for an additional 12-15 minutes, or until it’s crispy and starting to blacken just around the edges.
6. Remove from the oven and allow to cool on the rack or eat immediately if you can’t stand to wait!

That’s it! Done!! This is the most amazingly spicy, sinfully sticky and slightly sweet bacon you have ever put in your mouth… and the absolute BEST part of this recipe? Your hair will smell like bacon for the rest of the day! (Hey boys, heyyyyy…)
